Citrus salad with y’extract vegan chease sauce

The savoury flavours of the cheese extract with the citrus make this salad a tasty way to enhance the flavours of various greens.

Ingredients - 

For the sauce:

3 tbsp of apple cyder vinegar
2 tsp of Dijon mustard
3 tbsp of olive oil
Juice of ½ lime
4 tbsp of Y’extract vegan chease

For the salad:

Lettuce or a green salad bag
4-6 radish, think sliced
1 grapefruit, peeled and sliced
1 lemon, peeled and sliced

Method:

Step 1

In a medium bowl, whisk together vinegar and Dijon mustard. Add olive oil and the Y’extract vegan chease to the vinegar and mustard, whisking all ingredients together. Still until it has a creamy consistency.

Step 2

In another bowl, whisk the dressing before combining into salad greens. Add the citrus fruit and radish and drizzle about 2 tbsp over each salad serving

Keep the dressing in the fridge for 5 days maximum.
